*Ingredients
°225 g (1 12 cups) unbleached all-purpose flour
°5 ml (1 teaspoon) baking powder
°5 ml (1 teaspoon) baking soda
°310 ml (1 1/4 cups) ripe bananas, mashed with a fork (3 to 4 bananas)
°1/2 cup (125 ml) coconut milk (see note)
°15 ml (1 tablespoon) lemon juice
°1/2 cup (115 g) soft unsalted butter
°210 g (1 cup) sugar
°1 egg
5 ml (1 teaspoon) vanilla extract
*Preparation :
Place the grill in the middle of the oven. Heat the oven to 180°C (350°F). Butter a 23 x 13 cm (9 by 5 in) 1.5 liter (6 cups) loaf pan and wrap it with a strip of parchment paper, letting it hang on two sides.
In a bowl, combine the flour, baking powder and baking soda. For reservations.
In another bowl, combine bananas, coconut milk, and lemon juice.
In a third bowl, beat the butter with the sugar with an electric mixer. Add eggs and vanilla and mix well. On low speed, add dry ingredients alternately with banana mixture and spread dough into skillet.
Bake for an hour or until a toothpick inserted in the center of the dough comes out clean.
Let cool on a wire rack before removing mold and slicing.
