FRIED POTATOES ONIONS & SMOKE SAUSAGE

 



Potatoes and garlic are a perfect combination, and this dish is easy to prepare. These fried potatoes make a great side dish for breakfast, lunch or dinner.


*What you will need


°2 pounds boiling potatoes - cut into 1-inch pieces (such as red skin, round white, or new)

°3 tsp olive oil

°5 to 6 garlic cloves, unpeeled

°1 tsp lemon juice

°1 tablespoon chopped green onions

°1 tablespoon chopped fresh parsley

°Salt and pepper to taste


°How to do it:


Rinse the potatoes under cold water; drain and dry.

Heat the olive oil in a large nonstick skillet over medium heat. Add the potatoes (should be in a single layer). Cook, turning frequently, for about 10 minutes, or until the potatoes are browned on all sides.

Add garlic; cover and reduce heat to low. Cook, stirring occasionally, for 15 to 20 minutes or until potatoes are tender.

Remove garlic; peel the skins. In a small bowl, crush the garlic then add it to the potatoes. Stir in lemon juice. Add green onion; cook another minute or two, until heated through.

Sprinkle with parsley and season to taste.
