Mom's Famous Cream Puffs

°choux pastry

°custard

°white fondant

°icing sugar

°food coloring

°Perfume of your choice


Recently updated by several pastry shops including Popelini's boutique in Paris, the creamy aroma of this divine dish comes in 20 different versions! La Pâtisserie des Rêves offers to show you how cabbage is garnished while letting you choose the flavor of your choice. We must not forget, however, that it was Boblini, the famous inventor of the choux pastry, who made it all possible. And when we taste it, we thank Him!


Technical steps for cream puffing:


Make the choux pastry and pastry cream.

Arrange in overlapping rows and cook pies on a perforated Silichef® baking tray. At the end of cooking, remove from the oven and let cool.

Separately, flavor the pastry cream with the aroma of your choice.

Decorate the cooled choux pastry cream by making a small hole in the back of each cabbage, using a pastry bag.

Glaze with colored or upgraded fondant or sprinkle with powdered sugar.

Reserve in the refrigerator.
