Ingredients
For the dough:
390 g flour
80 g sugar
20 g of fresh yeast
1/2 tsp of salt
50 g butter
83 ml whole milk
80 ml of water
1 tsp vanilla extract
2 large eggs
For garnish:
50 g butter
225 g sugar
2 tsp ground cinnamon
1/2 tsp nutmeg optional
Instructions
Mix the flour, sugar, bakiing powder and salt in a mixer using the hook.
Meanwhile, heat the butter, water and milk in a small saucepan until the butter is completely melted. Set aside and let cool until the mixture reaches 45-40 ° C.
Incorporate this mixture as well as the eggs and vanilla extract to the mixture with the flour and miix at low speed until a homogeneous dough forms. The dough should be flexible and no longer stick to the bowl. Once this stage is reached, continue blending for 3-5 minutes before stopping.
Transfer the dough to a lightly oiled bowl (with neutral oil), turn the dough so that the entire surface is lightly covered with oil, then cover and let rise at room temperature until the dough has doubled in size. (about 1 hour).
Meanwhile, prepare the garnish. Melt 50 g of butter in a smalil saucepan until you obtain a brown butter, then remove from the heat. In another bowl, combiine the sugar, cinnamon and nutmeg.
Flour the work surface. Degas the dough and leave to rest for 5 min, covering it with plastic wrap. Roll out the dough to form a recttangle of about 30 x 50 cm. Cover the surface with the brown butter, then distribute the cinnamon filling, making sure the spices are evenly distributed throughout.
Cut the dough into strips and stack them on top of each other. Cut again to form 5-6 slices. Take each stack of dough and place them in a cake tin. Cover and let swell at room temperature for about 30-45 min.
Preheat the oven to 178 ° C. Bake for 30-35 minutes, until the bread becomes golden brown. If the top of the bread bakes too quickly, cover with foil and continue baking.
Remove from the oven and let stand for 20-30 min in the pan. Peel off the bread by passing a knife between the bread and the mold, turn over and remove the bread. Serve lukewarm.
